Red Merlot wine is made through maceration - the infusion of skins. The richness of the color depends on the length of the process. It is mostly used in blends as it lacks bright aromatics, has little acidity, and a light tartness. Merlot is ideal for strong, dense, and tart wines as a "softener." The wines of Moldova and Romania are excellent.

Red Merlot wine has a soft, light, mildly tart taste when young. Young drinks have light aromas of red berries like cherries, raspberries, and sometimes ripe plums. Aged in barrels, it takes on a vanilla and bread toast flavor. There are two main styles: "warm" and "cold." The warm style contains notes of plums, cherries, raspberries, blackberries, chocolate, and coffee. The cold style has lingonberry, cherry, and a little minerality added.

Red Merlot wine is suitable for lean meats, grilled meat, simple dishes, light snacks, vegetable salads, poultry dishes, grilled vegetables, and aged cheeses. It's also excellent with spicy dishes.
