Saperavi red wine is a popular late-ripening grape variety originally discovered in Kakheti, east Georgia. Key features of this variety are:
- The fruit contains a large amount of anthocyanins, giving both flesh and skin a bright ruby red color.
- The longer the aging of the drink based on it, the more pronounced the flavor.
- It can accumulate glucose for a long period of time, and the level of acidity is not reduced.
From identical berries, different wines can be obtained using different techniques. There are table varieties, dessert varieties, and spirits. Among them:
- "Kindzmarauli"
- "Akhasheni"
- "Mukuzani"
- "Apsny" and others.
The Saperavi wine of the same name is in the greatest demand. Traditionally, it is produced using the Kakhetian method: the mash is fermented in clay jugs (kvevri) that are buried in the ground. However, in recent years, many companies use a different method - fermentation in steel vats. To regulate the sweetness, fruits of different maturity are often used, and foreign matter, bones, and twigs are removed beforehand.
