Allanico wine is made from the oldest Greek grape variety. The drink is best ripened in dry and cool conditions. Late harvesting is necessary to prevent the tannins from becoming too high. Proper aging of the wine allows the flavor and aroma to unfold. The wine has a full-bodied taste with higher acidity and pleasing tannins. Aged wine becomes softer in taste and has a more fruity aroma. Some variants of the wine also have hints of chocolate and plum.
