Puglia has salty sea air, high mineral content in the soil and a noticeable drop in temperature at night. This terroir is ideal for the cultivation of tart grapes with a rather intense flavor and aroma. Local varieties (Primitivo, Negroamaro, Nero di Troia) are often combined with French varieties to enhance the bouquet of the wine. Hints of fruit and flowers, minerals, licorice, spices, light notes of wood and well-roasted nuts dominate. The rounded, full-bodied flavor of the wines perfectly complements such caloric dishes as game roasts, grilled red meats, smoked sausages with spices, pasta bolognese and cheeses.
